Kirinyaga remains one of our favorite places where coffee is produced, whenever cupping this coffee, our love for this region is fortified. The cup is full of citrus, date-like sweetness and fruit undertones. This year's crop is lighter on the acidity with a big profile of dehydrated berries, baking spices \u0026amp; a juicy black cherry finish. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eKiamugumo factory is situated in the community of Ngariama in the Nyangeni subregion of Kirinyaga County, on the slopes of Mount Kenya. In this area of Kenya, smallholders deliver coffee in cherry to washing stations. After harvesting, producers bring the ripe cherries to the factory in horses or motorcycles. The cherries are washed and depulped with water from the Kii River. After washing, the coffee is dried on typical African raised beds, which allow good air circulation between the beans. Beans are dried to between 11 and 12% moisture, then brought to the Central Kenya Coffee Mill in Karatina, Nyeri County for grading and sorting. Kiamugumo Coffee factory is run by a factory manager who oversees all activities within the factory. Together with other staff members they carry out duties such as weighing coffee, selection and grading of coffee, paying farmers and addressing farmers’ needs and concerns. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eKiamugumo has long-term goals to increase coffee production, training seminars, and access to education and sustainable processes for the farmers they work with. They also maintain a demonstration plot that farmers can visit and reference in relation to their own plots. Kiamugumo washing station is located in the buffer zone surrounding Mount Kenya National Park. Mount Kenya is also an extinct volcano and the second highest snow-capped peak in Africa (5,199 masl), after Kilimanjaro. The presence of this snowy mountain in Kirinyaga (the name of which actually means “White Mountain” in the native Kekuyu language plays a fundamental role for the population and coffee of the surrounding areas. Its glaciers feed the Kii river which plays an important role in the processing of the coffee at the Kiamugumo washing station. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eThese glacier-fed rivers also help cool the surrounding areas, giving the farms in the county an annual temperatures between 55-75F - privileged temperatures compared to other coffee-growing areas in Africa. This lot has a firm acidity and super clean structure to the mouthfeel. Chelbessa has a rounded tea-like attribute that fills the pallet. Waves of candied fruit and florals flow in the aftertaste. This lot consists of the Ethiopian Heirloom varieties Korume and Wolisho and others we simply have not been able to track, all of which inherently an Ethiopian Landrace. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eOnce the cherries arrive at the Chelbesa Washing Station, they are placed in water for sorting and removing of floaters. The cherries are then de-pulped and left to dry ferment in tanks for 2-3 days, to be later washed and placed to dry on raised beds. Overall this lot is lively with substantial notes of peach, bright nectarine, pink fruit, sweet tea \u0026amp; silky floral complexity. \u003c\/span\u003e\u003cspan\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eThe Danche Station in the Gedeb Zone, Ethiopia is managed by SNAP Specialty Coffee. There are approximately 800 farmers that deliver cherry to this washing station, come from the region and have around 2 Hectares (5 Acres) of land sitting at an elevation of 2,200 meters above sea level on average! This lot consists mostly of the Kurume and Wolisho varieties. Once cherries arrived at the Station, they are placed in water for sorting and removing floaters. Cherries are then de-pulped, dry-fermented for 96 hours and washed to remove the mucilage. The parchment is then laid out to dry on raised beds for 12-14 days.\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eWolisho and Dega are both Landrace varieties found in \u0026amp; around the Gedeo zone in Ethiopia. They are grown in the forest-gardens of the highlands, they have high quality potential despite irregular fruiting patterns. As an espresso, this coffee makes a wonderful shot and is a general pleasure to consume. \u003c\/p\u003e\n\u003cp\u003eThis decaffeinated coffee comes from five producers within the Divino Niño located in the municipality of Suaza, Colombia. These are long-time partners of ours whom take great care in their farming practices. This decaf lot is differentiated by it's higher quality cherry production.\u003c\/p\u003e\n\u003cp\u003eDecaf Divino was decaffeinated at the Descafecol plant in Manizales by using the organic compound ethyl acetate of which was derived from fermented Colombian sugarcane. This process is much more gentle than the commonly used water process, leaving much more of the seed (and flavor) intact. Having the decaffeination process done locally helps us pursue our goal of investing further in the people of Colombia. We also prefer this method of decaffeination to any other, it preserves the mass structure and flavor of the coffee seed. The station serves approximately 150-200 smallholder farmers from the surrounding communities of Wocho Sololo, Tabata, Mebocho, and Mender. Their farms sit at elevations of 2,240-2,280 meters above sea level. The primary variety is JARC 74158, along with other JARC varieties like 74112 and 74110.\u003c\/p\u003e\n\u003cp class=\"p1\"\u003eThe Honey Process is a form of partial cherry-mucilage drying (no bee honey used). These cherries were picked fresh at ripe stages and carefully delivered to the Osolo Station. The cherries were then de-pulped without the use of water. The wet parchment (cherry mucilage on the seed) is then dried on raised beds for 12-13 days with careful monitoring and rotations to ensure an even drying process.\u003c\/p\u003e\n\u003cp\u003eThe varieties: JARC 74158 (Walega), 74112 \u0026amp; 74110 are native species of coffee trees that were selected for greater use in Ethiopia's commercial coffee cultivation. This Chiroso is clean and consistent. The body and sweetness hit a happy medium. However you decide to brew this coffee, it hits with an approachable brightness that finishes clean. Notes include red currant, dried cherry, a firm minerality, subtle citrus and undertones of garden flowers and cashew butter. This is a great coffee for all types of brew styles \u0026amp; preferences.\u003c\/p\u003e\n\u003cp\u003eEdgar is originally from Betulia, where coffee runs deep in his family tradition. He bought his farm in 2017 and moved to Urrao to pursue his passion for quality, but his story in Urrao began way earlier. In 2007, during a training mission with local producers (teaching them about proper drying techniques and specialty coffee), Edgar encountered a variety that stood out. At first, others called it a Caturra, but Edgar knew it was different… That variety was Chiroso. He recognized its potential before it had a name, and from there, the rest is history. His discovery, alongside the work of producer Carmen Cecilia Montoya (Doña Carmen), helped put Urrao and Chiroso on the specialty coffee map. Today, Edgar continues to refine his craft with the same curiosity and dedication that first led him to this exceptional variety.\u003c\/p\u003e\n\u003cp\u003e\u003cmeta charset=\"utf-8\"\u003eEdgar’s washed process begins with selective harvesting, with the help of women from the vereda. The cherries are floated and undergo a double fermentation: first in baskets overnight, then after depulping, a second fermentation in open stainless steel tanks for 70 hours. The parchment is then washed in channels and laid to dry in marquesinas for approximately 20-25 days, depending on the weather.\u003c\/p\u003e\n\u003cp\u003eChiroso is a varietal that recently has impressed and excited the world of coffee. It has been at the top of Cup of Excellence and a top scoring variety for FlowerChild as well. Chiroso has been identified as an Ethiopian Landrace albeit not much else is known as to how it appeared in Urrao. This coffee continues to impress aficionados and coffee drinkers worldwide. Chiroso is still difficult to acquire, that said, when you can experience it at this level, it is a rare treat.
